Spicy Sockeye Salmon Rolls

Ingredients:
Sockeye Salmon
Sushi Rice
Cucumber
Nori Sheets
Spicy Mayo
Sesame Seeds
Preparation:
Start by cooking your sushi rice according to package instructions and season it while still warm with rice vinegar, sugar, and salt. Set aside to cool slightly. To prepare the salmon, season it lightly with salt and pepper and bake, about 10-12 minutes on 400°F depending on thickness. Let it cool slightly, then flake it into bite-sized pieces and mix with spicy mayo until evenly coated. Lay a sheet of nori shiny-side down and spread a thin, even layer of sushi rice over the nori. Add the spicy cooked salmon, top with sliced cucumber (and avocado if desired), sprinkle with sesame seeds, then roll tightly or fold into a hand roll. Serve immediately with soy sauce, pickled ginger, and wasabi.
