Brown Sugar Glazed Salmon with Roasted Vegetables

Ingredients:

  • Sockeye Salmon Portion

  • Brown Sugar

  • Butter

  • Olive Oil

  • Sweet Potato

  • Parsnip

  • Red Onion

  • Lemon

  • Black Pepper

  • Salt

  • Garlic Powder



Preparation: 

Start by preheating the oven and chopping the sweet potato, red onion, and parsnip into bite-sized pieces. Toss the vegetables with olive oil, salt, and black pepper, then spread them out on a baking sheet and roast until tender and caramelized. While the vegetables cook, season the salmon with salt, pepper, and garlic powder. In a small pan, melt butter with brown sugar until it forms a glossy glaze, then brush it generously over the salmon. Sear or roast the salmon until just cooked through and beautifully glazed. Plate the roasted vegetables, nestle the salmon on top, and finish with a squeeze of fresh lemon. Sweet, savoury, and comforting. Enjoy!
