Brown Sugar Glazed Salmon with Roasted Vegetables

Sockeye Salmon Portion
Brown Sugar
Butter
Olive Oil
Sweet Potato
Parsnip
Red Onion
Lemon
Black Pepper

Garlic Powder
Preparation:
Start by preheating the oven and chopping the sweet potato, red onion, and parsnip into bite-sized pieces. Toss the vegetables with olive oil, salt, and black pepper, then spread them out on a baking sheet and roast until tender and caramelized. While the vegetables cook, season the salmon with salt, pepper, and garlic powder. In a small pan, melt butter with brown sugar until it forms a glossy glaze, then brush it generously over the salmon. Sear or roast the salmon until just cooked through and beautifully glazed.
