Oven-Roasted Miso-Sesame Glazed Salmon

Ingredients
Sockeye Salmon Fillet
Olive Oil
Salt and Pepper
White Rice
Miso paste
Sesame oil
Kewpie Mayo
Seasonal Vegetables
Soya Sauce
Vinegar
Sugar
Sesame Seeds
Preparation
Preheat the oven to 425°F and cook a cup of white rice in a rice cooker or pot. Prepare your vegetables by pickling them in soy sauce, vinegar, and a pinch of sugar—the longer they sit in the fridge, the better. Season the salmon fillet with olive oil, salt, and pepper, then place it on a baking sheet or wrap it in foil before baking for 12–15 minutes. While the salmon cooks, make the glaze by mixing a few tablespoons of Kewpie mayo with a teaspoon of sesame oil, a small amount of miso paste, and a few teaspoons of soy sauce. Once the salmon reaches an internal temperature of 135–145°F, remove it from the oven and let it rest for a few minutes. Serve the salmon over a bed of white rice with your pickled vegetables, drizzle with the miso-sesame glaze, sprinkle with sesame seeds, and Enjoy!
