Turbot with Vegetables & Fruits on a Bed of Rice

Ingredients:
Turbot
Brown Rice
Sweet Potato
Avocado
Pickled Garlic
Arugula
Green Beans
Beets
Red Cabbage
Green Apple
Preparation:
Start by cooking the brown rice according to package instructions and keep warm. Toss cubed sweet potato with oil and salt, then roast at high heat until crispy and golden. Season the turbot and cook until opaque and flaky. Blanch the green beans briefly, then cool. Toss shredded red cabbage and sliced beets with a little oil, vinegar, and salt to make a quick slaw. Assemble the bowl with brown rice, flaked turbot, crispy sweet potato, green beans, arugula, beet and red cabbage slaw, avocado, pickled garlic, and a green apple. Balanced, fresh, and full of texture. Enjoy!
