Soft Scrambled Eggs on Sourdough with Cold Smoked Salmon

Ingredients:

  • Cold Smoked Salmon

  • Eggs

  • Sourdough Bread

  • Chives

  • Salt and Pepper

  • Everything Bagel Seasoning

  • Butter


Preparation: 

Start by lightly toasting the sourdough bread until golden and crisp, then set aside. In a bowl, crack the eggs and gently whisk just until combined. Heat a nonstick pan over low to medium-low heat and add 1 tablespoon of butter. Once melted, pour in the eggs and stir slowly with a spatula. Continue cooking gently until soft curds form and the eggs are just set but still creamy. Season with salt and pepper to taste. While the eggs finish cooking, start to thinly slice the Smoked Salmon. To assemble, spoon the scrambled eggs onto the toasted sourdough, then layer the Smoked Salmon on top. Finish with a sprinkle of everything bagel seasoning, freshly cracked black pepper, and chopped chives. Serve immediately while warm. Enjoy!
