Oven Baked Whole Whitefish stuffed with seasoned vegetables

Whole Whitefish
Salt and Pepper
Lemon Slices
Carrots
Zucchini
Capers
Parsley
Olive Oil
Preparation:
Start by pat-drying the whole whitefish and season it generously with salt and pepper, then rub it lightly with olive oil. Stuff the belly cavity with fresh lemon slices, capers and a handful of parsley to infuse the fish with bright, herbal flavor as it cooks. Toss the carrots and zucchini with olive oil, salt, pepper, and capers, then spread them across a roasting tray to form a flavorful vegetable base. Place the seasoned, stuffed fish on top of the vegetables and add a few extra lemon slices and parsley over the surface for aroma and colour. Transfer the tray to a preheated 375°F oven and roast for 1 hour, allowing the fish to become tender and flaky while the vegetables caramelize around it. Let the fish rest briefly before serving it warm with the roasted vegetables and enjoy a cozy, nourishing meal that feels just as comforting to make as it is to share!
