BQQ'd Whole Whitefish stuffed with seasonal vegetables and a lemon dill sauce

Ingredients:
Whole Whitefish
Salt and Pepper

Preparation:
Start by pat-drying a whole whitefish and optionally scaling it, as the skin isn’t edible otherwise. Lightly score the fish and stuff it with slices of lemon, onion, tomato, and whole garlic cloves through the belly cavity. Season generously with salt and pepper, and rub with olive oil if desired. In a small bowl, mix olive oil, lemon juice, parsley, dill, minced garlic, and a pinch of salt and pepper to create a fresh lemon-herb sauce. Wrap the stuffed fish in foil and place it on a medium-high BBQ, cooking for about 25 minutes—or until the internal temperature reaches 145°F—flipping halfway if needed. Once done, let the fish rest for five minutes, then carefully remove the meat and pin bones. Drizzle with the lemon-herb sauce and serve warm with seasonal vegetables for a light, flavourful meal.
