Fried Pickerel Bites with a Side of French Fries

Ingredients:
Pickerel Fillet
All-Purpose Flour
Breadcrumbs
Eggs
Milk
Vegetable Oil
French Fries
Spicy Mayo
Lemon
Preparation:
Start by cutting the pickerel into bite-size pieces and pat dry. Set up a simple dredging station: lightly season flour, whisk eggs with a splash of milk, and mix breadcrumbs with paprika, garlic powder, salt, and pepper. Coat the pickerel pieces in flour, dip into egg, then toss in the seasoned crumb mixture until fully coated. Heat oil until hot and fry the pickerel bites in batches until golden brown and crispy, about 2–3 minutes per side. Transfer to a paper-lined tray and season with a pinch of salt while hot. Serve immediately with crispy fries, a side of spicy mayo or aioli, and a squeeze of lemon. Crunchy, tender, and Enjoy!
