Spot Prawn Tails and Breaded Pickerel with Steak and Roasted Vegetables

Ingredients:
Spot Prawns Tails
Pickerel Fillet
Bread Crumbs
Steak
Asparagus
Sweet Potato
Salt & Pepper
Olive Oil
Preparation:
Start by seasoning the steak generously with salt and pepper. Heat a skillet over medium-high heat with a drizzle of oil and cook the steak to your preferred doneness, about 3–4 minutes per side for medium-rare. Let the steak rest before slicing. Peel and cube the sweet potato, then roast in a 425°F oven with oil, salt, and pepper for 25–30 minutes until tender and caramelized. Toss the asparagus with oil, salt, and pepper, then roast or pan-sear for 6–8 minutes until bright green and lightly charred.
Pat the pickerel fillet dry, season with salt and pepper, then coat lightly in bread crumbs. Pan-fry in a little oil over medium heat for 3–4 minutes per side until golden brown and flaky. In the same pan, quickly sauté the spot prawn tails for 2–3 minutes until pink and cooked through. Plate the sliced steak alongside the crispy pickerel, prawns, roasted sweet potatoes, and asparagus, then finish with an extra sprinkle of salt and pepper before serving.
