Breaded Pan-Fried Walleye with Roasted Vegetables and Rice

Ingredients
Walleye Fillet
Breadcrumbs
Flour
Egg
Lemon
Zucchini
Carrots
White Rice
Seasoning of Choice
Unsalted Butter
Salt
Pepper
Preparation
Pat the Walleye dry, lightly salt and place in fridge to dry while preparing the dredge. Beat Egg in a flat dish as the egg wash. Add Flour to a plate and lightly season with spices of choice, Salt and Pepper. Place Breadcrumbs on a flat dish. Dredge Walleye in the Flour mixture, then into the Egg Wash, before coating with Breadcrumbs. Heat pan to medium-high heat with a large pat of Unsalted Butter, once butter is melted and foaming add Walleye. Cook for a few minutes per side until desired doneness. Finish with a squeeze of fresh Lemon Juice, plate with seasonal roasted vegetables and White Rice and Enjoy!
