Cajun Style Spot Prawn Tails Paired with a Corn Salsa

Ingredients:
Spot Prawn Tails
Cajun Seasoning
Rice
Corn
Tomatoes
Bell Pepper
Red Onion
Cilantro
Lime Juice
Preparation:
Start by cooking the rice according to the package instructions and set aside, keeping it warm. In a bowl, combine the corn, diced tomatoes, chopped bell pepper, finely diced red onion, and chopped cilantro. Drizzle with fresh lime juice, season lightly with salt and pepper, and toss to create a bright corn salsa. Now, peel & devein then pat the Spot Prawn Tails dry and toss them with Cajun seasoning. Heat a drizzle of olive oil in a skillet over medium-high heat and sauté the prawns for about 2 minutes per side, stirring occasionally, until they are pink, lightly browned, and cooked through. To serve, spoon the rice onto a plate, top with the Cajun prawn tails, and add a generous scoop of the corn salsa on the side. Finish with an extra squeeze of lime for a fresh, vibrant flavour.
