Spot Prawn Tacos with Colourful Vegetables Toppings

Ingredients:
Spot Prawns Tails
Salt & Pepper
Garlic Powder
Paprika
Corn
Black Beans
Red Bell Pepper
Red Onion
Cilantro
Lime, Juiced
Avocado
Preparation:
Start by seasoning the Spot Prawn Tails with salt, pepper, garlic powder, and paprika. Heat a drizzle of oil in a pan over medium-high heat and cook the shrimp for 2–3 minutes per side until pink and lightly browned. Remove from the pan and set aside. In the same pan, sauté the corn, diced red bell pepper, and red onion for 4–5 minutes until slightly softened and lightly charred. Stir in the black beans and cook until warmed through. In a small bowl, mash the avocado with lime juice, salt, and a little cilantro to make a quick guacamole. Warm the tortillas, then spread the avocado mixture onto each tortilla. Top with the shrimp and the corn and black bean mixture, then finish with fresh cilantro and an extra squeeze of lime before serving. Enjoy!
